Brinjal / Eggplant is called in different language in different location of India such as Kathirikkai in Tamil, Begunn ( Bengali ), Ringna ( Gujarati ), Badhanekayi ( Kannada ), Vazhuthininga ( Malayalam ), Vaangi ( Marathi ), Baingan ( Punjabi ), Vankaya ( Telugu )
- 1. 500gm brinjals/eggplant (Baingan)
- 2. 3-4 tablespoon oil
- 3. 2 tablespoon mustard seeds ( rai / sarson)
- 4. 2-3 dry chilli
- 5. 25grms Peanuts (Mungfali)
- 6. 1 cup coconut (nariyal)
- 7. 1 teaspoon turmeric (haldi) power
- 8. 1 teaspoon cumin seeds (jeera) powder
- 9. 1 teaspoon chilli (michi) powder
- 10. 1-2 inch ginger (adrak) chopped
- 11. 6-7 garlic cloves (lehsun)
- 12. 2 big size tomato chopped
- Wash the brinjals perfectly and slit brinjals into 4 pieces like the picture and keep them in a bowl of water.
- Fry peanuts and coconut for 5-7 mins without oil on high flame. After it roasted well, let it to be cool for 5-10 mins. Then grind it for stuffed masala powder.
- Heat pan with 2 tablespoon oil then add mustard seeds. When it starts splutter, add onion, ginger, garlic and stir it until turns to brown. Then add tomato into the pan and mix it well. Fry for 5 mins on medium flame.
- Let it cool and grind onion, ginger, garlic, tomato separately for the paste again.
- To prepare the paste mix both peanuts and coconut powder and onion, ginger, garlic, tomato paste well. Then add little bit turmeric powder, chilli powder and salt.as per taste. Mix all masala ingredients perfectly by hand and check the thickness of the masala stuff.
- Stuff half of the masala between the slits of brinjals and keep aside the rest of masala stuff in a separate bowl for gravy.
- Heat the same pan with 2 tablespoon oil and fry the stuffed Brinjals/ Eggplant (Baingan) on both side well for 5 to 10 minutes on high flames. Then check if they are cooked well add left over masala paste and little bit water for gravy into the pan and stir it well till it blends properly.
- Now Brinjals/ Eggplant (Baingan) Stuffed Recipe is ready to serve. Enjoy it with rice or roti.
How to Cook Brinjal/ Eggplant (Baingan) Stuffed Recipe Step bt Step

- Wash the brinjals perfectly and slit brinjals into 4 pieces like the picture and keep them in a bowl of water. Stuff half of the masala between the slits of brinjals
- Heat the same pan with 2 tablespoon oil and fry the stuffed Brinjals/ Eggplant (Baingan) on both side well for 2 minutes on high flames.Then fry it low flames and close it with a lid .
- check if they are cooked 50% then add left over masala paste and little bit water for gravy into the pan and stir it well till it blends properly.
